    Sweet Potatoes - Quick Facts

    • One of the superfoods.
    • Full of fiber, calcium, potassium, iron, thiamine, and vitamins A and C
    • Virginia has been growing sweet potatoes since 1648
    • George Washingon was a sweet potato farmer before he became a general and the first U.S. president

    Sweet Potatoes -How to Cook and Eat a Sweet Potato

    1. Wash the sweet potato thoroughly and pat dry.
    2. Pierce 3-4 times with a fork.
    3. Place the potato on a microwave-safe plate and in the microwave for 2-4 minutes.
    4. If your potato isn't fork tender after 5 minutes continue microwaving in 30-second increments.
    5. Split potato down the middle and enjoy!
    6. Optional: season with salt and pepper and top with a small pat of butter.
